As if to redeem what I missed out for breakfast yesterday, I went all out for this Sunday brunch. There was the Baked Eggs with Duchess Potatoes, Apricot Agave Nectar Souffle, and Banana Pancake with Coconut Syrup Peanut Butter. I prepared most of the ingredients the day before and so it didn't take that much time to get it all done this morning.
The Apricot Agave Nectar Souffle turned out so-so. Both the Banana Pancake with Coconut Syrup Peanut Butter and Baked Eggs with Duchess Potatoes shared the winner seat. One catered to the sweet tooth and the other was gastronomically satisfying.
