Breakfast a la Mexican



Huevo Mexicana
It's pronounced "weh-vose", and it means Mexican-style eggs. It's basically scrambled eggs with Mexican salsa.

Ingredients:
(serves 2)
  • 4 eggs
  • 1/4 large onions, chopped
  • 1 fresh tomato, peeled and chopped
  • One jalapeƱo pepper, sliced
  • 2 Tbsp olive oil
  • Fresh Tarragon, a sprinkle
  • Salt
  • 1 Tablespoon Cilantro leaves, chopped
  • 1 Tablespoon chives, chopped

1 Sautee the onions with a pinch of salt until translucent. Add the chopped tomatoes and let them cook for a few minutes on medium high until they are somewhat cooked and mushy and some of the moisture has evaporated. It's okay if the tomatoes brown a bit. Add tarragon and jalapeno.

2 Crack the eggs directly into the pan with the sauce. Add salt. Stir the mixture with a spatula to mix in the sauce and to lightly scramble the eggs. Remove from heat when the eggs are cooked to the desired consistency.

Sprinkle the eggs with cilantro.

You can serve it with bread or tortilla. I served it with a Chilli Potato Wedges and sour cream. The taste compliment each other very well. Something different for morning eggs :)
